近日,食品科技學院劉素穩教授課題組在淀粉及其與多酚的復合物制備及其功能特性研究取得系列進展。在中科院1區Top期刊《Carbohydrate Polymers》、《International Journal of Biological Macromolecules》分別發表了題為“Wheat starch-Lonicera caerulea berry polyphenols complex regulates blood glucose and improves intestinal flora in type 2 diabetic mice”、“Inhibition ofα-amylase digestion by a Lonicera caerulea berry polyphenol starch complex revealed via multi-spectroscopic and molecular dynamics analyses”、“Effects of dynamic high-pressure microfluidization treatment on the structural, physicochemical, and digestive properties of wheat starch-Lonicera caerulea berry polyphenol complex”、“A mechanistic study of chestnut starch retrogradation and its effects on in vitro starch digestion”、“Effects of high hydraulic pressure on the short-term retrogradation and digestiveproperties of Lonicern caerulea berrypolyphenol-chestnut starch complexes”五篇論文,劉素穩教授和劉暢副教授分別為通訊作者。劉素穩、劉暢、22級食品科學碩士研究生分別為一作。該成果得到國家自然科學基金青年基金(32101952)、河北省自然科學基金杰出青年科學基金(C2024407033)、河北省自然科學基金面上項目(C2023407040),和板栗產業技術教育部工程研究中心的資助。(編輯:孫艷敏 審核:王榮加)
